Haystack Mountain Dairy, a goat farm and creamery located on seven acres of the rich agricultural plain that skirts the foothills of the Rocky Mountains northeast of Boulder, is a farmstead dairy comprised of dedicated people and a healthy herd of Nubian, Saanen, Alpine, Oberhasli and LaMancha goats. The mix of milk from all of these goats produces delicious cheeses.

Haystack was recently honored as one of 24 U.S. dairies invited to send cheese to the third "Feast of Cheeses" in Bra, Italy. The festival was sponsored by Slow Food International, an organization founded by Italian writer Carlo Petrini as an antidote to the industrialization of food production by fast-food outlets.

The American Cheese Society bestowed awards on this unique pasteurized goat's milk chèvre in 2003, 2005, and 2006. This 4-oz. log of Applewood Smoked Chèvre is cold-smoked with applewood, giving it a tantalizing flavor that will add zest to a beet salad with rosemary, crumbled over grilled vegetables, or served on its own with an assortment of olives. You may want to pair it with a glass of Sauvignon Blanc or a non-oaky chardonnay.

This cheses is wonderfull with seeded crakers, a dry white chardonney for guests before dinner.

We use about two logs/month just for our own dining needs. Served with baguette, on salad, with sliced pear...yum! I also love the cracked pepper cheese which isn't sold on this website, I guess.
I've been lucky to visit the farm and see that it's clean and the animals seem well cared for.
The staff was very friendly.
This cheese makes a wonderful holiday gift!

One great thing about fresh chevre...if you start with a superior base cheese, you can do all kinds of fun and delicious things with it! The smoky flavor comes through in this creamy goat chevre, without overpowering the cheese.

This goat cheese is very fresh and creamy, but it has a wonderful smoky-sweet flavor. It's nice and delicate in flavorful and doesn't taste like fake liquid smoke. It's wonderful on its own, but I thought it was perfect on a romaine salad with cold, grilled duck breast.
