I was lucky enough to have this as an appetizer in a restaurant once and started experimenting on my own. Take whole Piquillo peppers , carefully cut down one side and stuff the pepper with a mixture of this cheese (add your own favorite spices, I always add garlic and experiment with other spices each time). This is the first time I used the smoked goat cheese so you don't have to use this particular Chevre. wrap the pepper around the cheese stuffing. Then you can either place the peppers in the oven and heat just until warm or I actually prefer warming them in a skillet just long enough to start barely browning them. Last time I made these I wrapped the stuffed pepper with 1/3 slice of bacon and warmed in the oven until the bacon crisped up. My husband loves bacon so he loved them; but, honestly I think they are just as good without the added fat. Next time I plan to make these stuffed peppers my main entree. Prepare them just as above and then place on top of a bed of your favorite pasta tossed with your favorite spaghetti sauce. Using the bacon may actually add to the appearance of this dish, or you could just sprinkle the top of the dish with fresh bacon bits and a little parmesan cheese.

We use about two logs/month just for our own dining needs. Served with baguette, on salad, with sliced pear...yum! I also love the cracked pepper cheese which isn't sold on this website, I guess.
I've been lucky to visit the farm and see that it's clean and the animals seem well cared for.
The staff was very friendly.
This cheese makes a wonderful holiday gift!

One great thing about fresh chevre...if you start with a superior base cheese, you can do all kinds of fun and delicious things with it! The smoky flavor comes through in this creamy goat chevre, without overpowering the cheese.

This goat cheese is very fresh and creamy, but it has a wonderful smoky-sweet flavor. It's nice and delicate in flavorful and doesn't taste like fake liquid smoke. It's wonderful on its own, but I thought it was perfect on a romaine salad with cold, grilled duck breast.
