One taste and this cheese catapulted into my top 5 cheddar fav's. This is the best offering from Cabot that I have ever had. Indeed, up there with the best of the best in the world of cheddar. Very sharp with complex hints of fruit and nuts and a smooth creamy finish with a satisfying cheddary aftertaste. It is a bit salty and it crumbles but that slight failing is insufficient to detract too much from this wonderful cheddar. Cabot needs to concentrate on this style of old school production...purely because I want more and it is very hard to get a hold of. A report card of A+

I never have less than 10 pounds of cheese on hand. This old school cheddar re-writes my idea of good eating cheese, the flavor is outstanding. I want more.
