Not long ago, the word mascarpone would draw quizzical looks. Nowadays, the distinctly Italian-sounding name is the only thing obscure about this velvety, rich cream cheese. One story suggests that a visiting Spanish dignitary in the 16th-century tasted fresh mascarpone in Italy and proclaimed it “mas que bueno” - better than good! In the early 1990's, as U.S. chefs discovered the dessert phenomenon tiramisu, its chief ingredient - mascarpone - began to grow in popularity.

It was only a matter of time before Allison Hooper and Bob Reese, co-founders of Vermont Butter & Cheese Company, were asked to create mascarpone locally. Since then, Vermont Mascarpone has garnered accolades for its fresh, rich cream flavor and smooth, thick texture - perfect for spreading or swirling.

I used the marscapone cheese in my first attempt at Tiramisu. I only ordered one 8 ounce container and realized after I got it that I needed more than 8 ounces. Because time was an issue, I substituted 8 ounces of cream cheese with the marscapone cheese. I think the marscapone made the Tiramisu taste much creamier than it would have with regular cream cheese. I can only imagine how good it would have been if I had had the correct amount of marscapone to use in my recipe rather than having to mix cream cheese with it. Next time I will know and will be better prepared.

I mixed in a little powdered sugar and lemon zest, placed it in a crepe and topped with Radici Chestnut Spread (rum and orange flavored). What a treat on Christmas morning! My husband was eating the leftover filling on cream crackers.
