Rofumo is a semi-soft cheese that starts out as a mellow, Fontina-type product. The cheese masters at Roth Kase, one of Wisconsin's most honored cheese manufacturers, flavor it through a hickory smoking process. A sweet hint of yeast rounds out the pallet of flavors.
