By World War II, cheese production in Wales had nearly ceased; run out of business by large cheese making factories in England. Fortunately for us, there has been a revival of old ways by a new generation of cheese makers. They have saved Caerphilly (the only traditional Welsh cheese still made) from the factory-made processed form it had become in England to its original farmhouse character. Now, they are creating other fine cheeses such as Red Dragon, also known as Y-Fenni. This smooth, firm, tasty Cheddar is made with Welsh brown ale and mustard seeds. Red Dragon is a buttery and spicy cheese with plenty of bite, but is not too hot. Not only do the mustard seeds give Red Dragon its marvelous flavor, but also its texture. The brown ale makes the cheese moist and tangy. Red Dragon is aged for three months, made from cow's milk and is vegetarian. Serve as a table cheese or melted on toast with dark ale or try a Shiraz, if you prefer wine.

The entire family loved this cheese! The mustard tang just gave it that little something "special". I first tried this cheese at a beer festival at Split Rock Resort and have loved it ever since!

I will start off with the disclaimer that my review is merely based on personal taste, not that the cheese itself is bad. It was just simply too strong for my palate. If you don't like mustard a lot, I'd say stay away from this cheese.

This is a fantastic cheese. It is another one that disappears soon after opening it. The mustard seeds and ale make for fine flavor. Certainly not boring. We really like it with beer, but it is fine with wine and crackers. It goes nicely with meats on a snack tray. We have served this to friends and it has always been a favorite.

Oh my gosh! There is nothing in the world like Red Dragon Cheese. Who would have thought that mustard seeds and cheese would fit so well. This extremely smooth, velvety and rich cheese is unlike anything I have ever had before.

I used to buy this locally, but the crazy store discontinued it much to their chagrin of fans. BUT, thanks to [...], Reg Dragon cheese remains a part of our lives. Deliscious! Melted on a burger? Oh, my yes. With crackers, definitely. Horsd'oeuvres, salads evrything. I haven't tried it melted, but I will.
