For some, the tangy bite of goat cheese can be too strong, but for others the unique flavor of goat cheese has an irresistible allure and that tang is the best part. For those fans, Rosy Goat, was created. Rubbed with chopped rosemary and aged for 45 days, Rosy Goat (known as Caprillice in Spain) maintains a soft texture with a full goaty flavor that is wonderfully accented by the resinous rosemary.

Comments about Rosy Goat:

Tangy goat flavor, with the rosemary makes this cheese addictive. This cheese is so good, its the whole reason I made an igourmet account. Saw it a few times in a local supermarket, than it vanished forever, and have never seen it again anywhere in any other metro supermarket I have visited in NYC even in Manhattan. I figured neighborhoods I cant even afford to live in would have it, but I was wrong. So I googled it which brought me here.
My only complaint is that the rosemary rind can sometimes be too strong tasting, but it can be cut off. Yet sometimes I eat the rind anyway, and not remove it before cubing it. It depends what mood I am in. Some users love it.
If you like this cheese, check out the black pepper goat chevre. Its got a stronger kick!

Comments about Rosy Goat:

A little of this cheese going a long way. I thought the rosemary would be over powering, but my husband and loved the rosemary encrusted edges the best. It has a wonderful mouth feel and after taste. I highly recommend it.
