Tilsit has traveled all around the world and is currently produced in several countries. Tilsit was originally the invention of Dutch immigrants in the town of Tilsit in East Prussia, now Lithuania. It eventually made its way to Switzerland and Germany where it is called Tilsiter, but don't let the name "Russian Choice" fool you! Russian Choice Tilsit comes not from Russia, but from Chile. It has a mellow flavor and is less assertive than its Germanic counterparts with pungent washed rinds. The traditional shape for Tilsit is a large wheel but, increasingly, the cheese is being produced in loaves so it can be sliced for sandwiches. It has a creamy yellow paste and irregular holes that give it a bread-like appearance.

Creamy and delicious, this Tilsit is a superb choice for a melting cheese, whenever you need to enrich a dish. Even mild-mannered palates will find a lot to love with this cheese from South of the Border!

VERY soft. Well, not like a triple cream, but I was surprised by the texture. Good mouth feel, with a slightly bitter aftertaste, but pleasant. The picture is misleading, mine was absent of holes and more homogeneous. Delicious as an eating cheese, or spread on some toast points.

the cheese is not a Tilsitter it can at best be called a Havarti, it needs to age a bit.The cheese is not bad, but I wanted a Tilsitter and it is far from it.

Let this cheese sit out for a few hours to reach room temperature and become spreadable in consistency. Use a close-textured bread. Spread the cheese to within 1/2" of the edge of the bread slice. Butter the outside and place in a non-stick frying pan, heated over medium heat. Fry for about 2 minutes per side.

The best grilled cheese!

The first time I've had Tilsit, from the moment it meets your mouth its like eating "solid cream". One of the most pleasant cheese I have ever eaten. I will be ordering more very soon as it is going to be hard to share this with friends
