This raw-milk Nokkelost is a labor of love from Nokkelost aficionado Jeff Margolis, owner of Everybody's Store, a gourmet grocery in Van Zandt, Washington State. Jeff's store stands at the north end of the South Fork Valley, offering a variety of cheeses and other specialty items. When he could no longer get imported Nokkelost in 2001, Jeff commissioned a local Whatcom county cheese to make their own raw-milk version for his store. He still stands as the only supplier of Nokkelost in North America.
This caraway-spiced American Nokkelost has a smoother, creamier texture than the imported version, as well as a lower sodium content. In 2003, it was awarded the title of Grand Reserve Champion for placing first in the “International - Open Cheese” competition at the Royal Fair in Toronto, Canada.
