Herbs and Flowers Cheese, Kuh Heublumenkäse in German, is a seductive blend of fragrant dried flowers, herbs, and pure organic Bavarian cow's milk. Besides coming from high quality milk, this German cheese takes on extra character through the selection of organic flowers, including safflower, blue mallow, peony and marigold, mingled with rosemary, oregano and a dash of unrefined rock salt. The cheesemakers coat the cheese with herbs and flowers and then seal it with transparent wax. Throughout the cheese´s 6-month ripening period, the combined essences seep into the cheese's paste, rendering an innovative semi-hard cheese bursting with aroma. The creamy cow's milk balances perfectly with the herb and flower flavors.

We join my sister and her husband once a month for a DVD movie selection and unusual and varied cuisine. Always good wine, fine single malts, and different and unique foods. This is incredibly unique, all of the natural flavors are imparted to the cheese. Using a Columbia Crest Chardonnay to cleanse the palate, each taste allowed a sample of a discernable herbal taste. This is a very rewarding taste experience for anyone who appreciates something different.

This is one of the most remarkable cheese I have ever tasted. Each bite is nuanced with the different flavors of the herbs have been touching it -- rosemary, thyme, and every now and then a distinct flavor of mint and cocoa comes through. The rind comes off very easily and reveals a rich, creamy cheese.
