Tumbleweed is a cross between the classic French cheese, Cantal by Le Salers, and aged Cheddar. This semi-hard cheese shows its true form after eight to nine months in the caves of 5 Spoke Creamery. While other cheeses promise the trademark Cantal flavor - Tumbleweed actually delivers. It's delicately fruity, with that unique curdy texture. The finish pulls in cheddar-like creaminess and brothy, brown butter aromas.

Great cheese starts with great milk. At 5 Spoke Creamery (based in Port Chester, N.Y) all of their cheeses are hand made in the farmstead tradition (produced on site with a closed herd) from the raw milk of grass-fed cows. Their milk comes from Holstein cows that are free of pesticides and hormones. Raw milk from a grass-fed cow has a depth of flavor-or terroir-that cannot be duplicated.

This cheese is very filling and makes a great snack with baked cashews. It's just a little too bitter for my taste but still very good. Best at room temp.

I found an epicurious recipe for baked eggs that calls for Cantal cheese - Tumbleweed was all I could find. This is a great cheese that I will definitely buy again. DH is picky about cheese, and started grabbing handfuls of the shredded cheese intended for the eggs to snack on. It's not very strong, but has a definite flavor to it. It's softer than a cheddar cheese, but not crumbly or too creamy - that is, it shredded nicely, and I think it would be excellent on crackers also.

Even though the names sounds a little funny; I was so impressed with this cheese. It was just creamy enough and as described a little like the best cheddar you have ever eaten. YUMMY
