We first "discovered" this at Manor Hovey in North Hatfield, Canada. We've been trying to get it stateside for a while, so thank you iGourmet! This is an extrordinary cheese. As a 12-month aged traditional cheddar made from goat's milk, it manages to be greater than the sum of its parts. Highly recommended. Serve very thin and let it dwell on your tongue like Tete de Moine.
