A full-fat cow's milk cheese, Atalanta Creamy Blue uses the same cultures found in Italian Gorgonzola to develop its characterisitc tang. Unlike typical blue cheeses, Atalanta Creamy Blue doesn't crumble, and it isn't too salty. You can even slice it to enjoy a mouthful of its subtly rich flavor. It combines well with other cheeses on a cheese plate--adding a piquancy that doesn't overwhelm other flavors.
