The original pioneer of Blue Stilton, commonly referred to as "The King of Cheeses", was Mr. Cooper Thornhill, owner of the Bell Inn on the Great North Road in the town of Stilton. In 1730, Mr. Thornhill discovered a distinctive blue cheese while visiting a small farm in rural Leicestershire. He fell in love with the cheese and forged a business arrangement that granted the Bell Inn exclusive marketing rights to Blue Stilton. Soon thereafter, wagon loads of cheese were being delivered to the Inn. Since the main stagecoach routes from London to the North of England passed through the village of Stilton, he was able to promote the sale of this cheese and the legend of Stilton rapidly spread far and wide.

This glorious four pound wheel of Blue Stilton is the cheese the English have kept for themselves until now! Its extraordinary flavor comes from careful aging for a minimum of four weeks. This special Stilton, still produced in Leicestershire, is full, rich and creamy. Its shocking blue veins radiate outward from a natural, crinkly brown crust, revealing layers and folds of honeyed, cheddary flavor. We recommend this Stilton as a pure table (eating) cheese. It is too precious and delicious to submerge in a dressing or dip.

Some blue cheeses are overpowering, some are bland, but imho Stilton is "just right." I like to cut only what we'll be consuming and let it warm to room temperature before using. That little step allows the cheese to develop it's "full potential" and makes it a heck of a lot easier to spread.

We love it crumbled in salads, melted on top of fine cut of beef, spread on fresh sourdough bread (toasted, or plain), on good crackers; with port, or sherry and fresh fruit (pears and apples are great).

This 4 pound wheel is just the right size for a die in the wool blue cheese aficionado. BTW, my other love is a walnut covered, 2+ pound wheel of baked brie. Put the two together and invite some friends over; serve with sides of fresh fruit, good port, sherry and wine, crackers, fresh bread, etc.

I had been waiting for a month for this size to come in, we had about 25 people ove on Christmas Eve and this was the center piece of our Hor d'oeuvre's it was well received with just the right firmness to slice. Afterwards we had at least half of it left and we are still enjoying it!!![...]
