Spongata is the traditional cake of Parma, one of the oldest cakes made in Italy. It is a round, flat cake. The outside is made of soft pastry sprinkled with icing sugar. The inside is filled with a special stuffing of honey, almonds, pine nuts, candied fruit, citron, raisin and pulverized rusk. It is the typical Christmas sweet and can be preserved for a long time. A favorite of Parma's own Guiseppe Verdi, and so esteemed that it was a gift to the Duke of Milan, Francesco Sforza, in 1454. Available in 3 flavors: Tradizionale, Cappuccino, and Balsamic. Varieties sold separately.

Served this at a party. Wonderful. Not too sweet. The balsalmic vinegar gave it a flavor of mincemeat. I just ordered five to give as gifts. A great, great find.

I tried both the Tradizionale and the Cappuccino. Both are tasty, but the Cappuccino may be more distinctive.
