Colomba, literally meaning "dove" in Italian, is traditionally an Easter cake. Its origins are vague, but one legend says it comes from King Aboino, a cruel king, conquerer of Pavia. The king demanded 12 virgins from the town. Instead, the women baked him a cake in the shape of a dove, symbolizing purity and peace. The king was so touched by this gesture, he renounced his cruel proposal.
Albertengo's Colomba is rich with raisins, flavored with top quality Moscato wine and covered in a Piedmont hazelnut/almond icing. This cake is hand wrapped in beautifully decorated spring themed paper and finished with a green bow. (click on large photo to view the lovely packaging)
