Callebaut has traditionally produced its extra fine Belgian chocolate in bulk for professional pastry chefs. Fortunate home cooks could buy a chunk of its eleven-pound blocks of white, milk, or dark chocolate in some gourmet stores in larger cities, but the majority of us only experienced this delight when eating in top-class restaurants. Recently, Callebaut has created a smaller block of its rich, smooth chocolate to better serve this market. These half-kilogram blocks break into easy-to-use sticks. Home bakers now have access to the raw materials for making delicious dark chocolate mousse or a flourless chocolate torte, in which the quality of the chocolate used can make or break the final masterpiece.

Since I lived in Belgium for several years this is my chocolate of choice for cooking. [...]I use it often just melted with a little water to drizzle over vanilla ice cream...Voila,Dame Blanch! I also wouldn't dream of making chocolate mousse without this chocolate...no extra sugar needed...just butter and eggs!

This chocolate provides an easy, much-loved dessert treat. Just melt the chocolate with cream -- very simple in the microwave. Pour it into a heated fondue server -- and serve with slices of fresh fruit. This was the only food that was completely consumed at our teenager-filled Super Bowl party. The favorite fruit was banana slices, again very easy! The chocolate stores very well in the refrigerator for an extended period, so order extra blocks for currently unplanned entertaining.

I like to make icings and deserts that are not too sweet. This dark chocolate fits the bill as it is not too bitter, and it is very easy to bake with.

This chocolate is pure perfection. I used it to make a Belgian Chocolate tart, and it was fantastic. Also, the fact that it comes in smaller than an 11 pound block is great for home cooks!!!
