On the coast of central Venezuela east of Caracas is the small town of "Carenero", hence the name "Carenero Superior" for this growing region of select cacao beans sought by premium chocolate makers and chocolatiers the world over. Renowned for its complex flavor notes of fruit, flower, nut and spice, Carenero cacao gives an intense chocolate taste. We offer these flavors:
  • Apamate Dark Chocolate 73.5%: A smooth, fluid harmonious dark chocolate with delicately fruity aroma, subtle acidity and earthy, toasty hints of spice, all of which linger pleasantly on the palate. Higher cacao butter content gives it a wonderful mount-feel without compromising the complex cacao flavors.
  • Gran Saman Dark Chocolate 70%: The stalwart of the Carenero line, is intense, bold, earthy, complex, and balances pronounced bitterness with refreshing acidity to achieve a most robust flavor. This chocolate has complex notes of fruit, flower, nut and spice.
  • Mijao Dark Chocolate 61%: Delicate and balanced with interesting hints of apricot and plum. High cacao butter content results in a fluid, buttery texture and relative low acidity without compromising flavor and aroma.
  • Bucare Dark Chocolate 58.5%: The most versatile chocolate - balanced to perfection to achieve a robust cacao aroma with pleasant overtones of fruit. It has great character, texture, and a long, lingering mouth-feel.
  • Caoba Dark Milk Chocolate 41%: A fluid, smooth "dark" milk chocolate with wonderful caramel, nut and earthy flavors. Its notable flavor is the result of increased cacao content, among the highest of any milk chocolate on the market.
  • Icoa White Chocolate: Redefines world standards of excellence for white chocolate. Pure and fragrant - Icoa is made only with cacao butter, which accounts for about 55% of the cacao beans composition and, ergo, carries in it much cacao flavor and aroma.

I was a diehard swiss milk chocolate fan... until I discovered this incredible chocolate! I never liked bittersweet chocolate--that was because I had never eaten truly excellent bittersweet chocolate. It is complicated, interesting, sweet, slightly bitter, fascinating, and, like fine wine, tells a long and wonderful story as you let it dissolve like silk on your tongue. Be careful--once you try it, you'll want more!
