These biscuits are wonderful. The little bits of ginger in them offset the richness of the butter. They are not too sweet and are just great served with a cup of tea.

This is simply the best cookie I have ever eaten. They are totally addictive. I love the chewy ginger bits, so diffeent from the sugary crystalized ginger, and the buttery shortbread base is to die for. If I could make these myself, I would eat a dozen every day.
