Casa Corsini, established in 1921 by the Corsini family, bakes traditional Tuscan sweets in rustic wood fired ovens using recipes that date back to a time before modern conveniences. Their Ricciarelli are simply exquisite. A typically Tuscan pastry not commonly available outside of Italy, these diamond-shaped cookies are delicate, dainty, and light. Their presence adds sparkle to any dessert tray. Made with whole, fresh almonds crushed just before use, they remind one of fresh marzipan. The almond paste is blended with sugar and honey, baked, then sprinkled with powdered sugar. Ricciarelli are among the world's most exquisite pastries, so serve them with pride and confidence.
