A traditional part of the Piedmontese food culture, this custard has a wonderfully fresh texture and an intriguingly smooth texture. We found this under the counter in a restaurant in Tuscany where we had had dinner the previous night - panna cotta for dessert. We had all raved about it. During cooking school the next day in the restaurant kitchen, guess what we found? The box! I have been using it ever since to rave reviews. I do 1/2 milk, 1/2 heavy cream and add some additional sugar. I then make a somewhat tart raspberry sauce to go with it. Wonderful and no bad ingredients.

This is a delicious and very easy way to make panna cotta. I make it at least once a week. My family requests it for dessert every time I cook.
