To create these delectable confections, Les Chevaliers d'Argouges starts by simmering fresh slices of fruit in sugar until they have been perfectly candied. Then each piece is dipped into a tray of lucious chocolate. Each bite is a playful contrast between silken chocolate and chewy, candied fruit. The pineapple slices are enrobed in white chocolate, while the orange slices are coated with a layer of 70% dark chocolate.
