The timing of harvesting is crucial to maximize the quantity of red beans or “Cherry Beans” which produce Gold and Platinum quality coffees. The separation of cherry beans and green beans is essential to guarantee excellence. As soon as the cherry beans are picked, they are washed with spring water and peeled. The beans are spread on the terrace in thin layers and dried by the sun, turned many times a day until perfected.
