If you have no qualms with bacon and you like an alternate to lean slices of canadian bacon or pastrami, this is like bacon swirls. They put a generous dose of nutmeg, allspice, cardamon or something like it in the center and when the roll is thin cross-cut, you have to use a bacon press to keep the spirals from flowering up. Don't cook on too high heat and if its all crispy, you're pouring away alot of the flavor in the grease. This ham makes wonderful spaghetti carbonara or new year's black eye peas.
