Italian Salame traces its roots back to ancient Egypt, as early as the second century BC during the reign of Pharaoh Ramsey. Later, the production of Salami was prevalent throughout the Greek and Roman Empires, as it became the preferred way to preserve meat in the absence of refrigeration. In the traditional method, pork, sea salt and spices are stuffed in a casing, hung from the rafters, and left to age. Today, each Italian region has a specific Salami recipe, giving a distinct character to each Salami produced in each area. Sopressata is the favorite in the export markets because of its robust flavor and satisfying texture. I love Italian salami, but not this one. It's very very salty. The center is softer if not mushier than the ouside. When you cook them with food ( too salty for me as hors d'oeuvres ), they have a rubber consistency..It also has a bit too chemichal taste.. I would not recommend this for anyone. There are so many much better salami from this store than Genoa Salami..This is my first and also my last time to try Genoa Salami..

This is not a Bad product, but it just did not meet with my taste. If you are a salt lover, you just might enjoy this sausage. Good for sandwiches and Italian style salads or as a snack with cheese and crackers.
