Nicole Bergere has led a life dedicated to fashion and food. A career of fashion and theater design in Europe and the U.S. left her with the added perk of learning a lot about great food around the world. The lure of food became stronger as time went on and so began a passion for bread baking. And so, with a small stone mill and a basic knowledge of bread making, it all began.
In 1984, Nicole's Bake Shop was born, on the North Side of Chicago, in a
tiny place just big enough to hold the oven.
That is how the whole trend started with stone ground grain breads. She still grinds the grains but with a much larger mill and in a much larger place.
