this is excellent polenta and we use it often and have done so for years.
if you stir frequently and thoroughly - we use extra milk to thin - you will have a lovely, creamy polenta with great flavour. it's a wonderful base for fish or meats (toasted pine nuts and/or seared diver scallops are the best!). alternately, you can serve it creamy but herbed and seasoned accompanied by a great salad.
you can serve it in its own creamy state, bake it straight away, or bake the leftovers with a little olive oil and rosemary for a nice side of flavourful starch. you just can't go wrong.
this is perishable! if you live in a warm climate, like southern california, please consider storing the polenta in the fridge. it can become rancid if you don't. in any climate you should store it in an air-tight container or bag to prevent moth infestations.

I use as a side dish. Very tasteful and I use cream and/or Mascarpone cheese to make it creamy. I also add Italian herbs and a little garlic powder.
