Fregola Sarda is a pasta created by rubbing wet semolina wheat into little balls, then drying and toasting. Each little ball is bigger than a grain of Moroccan couscous. This specialty from Sardinia has a toasty, rustic flavor. It is a delicious pasta - excellent as a side dish served with meat or seafood, as an entree served with tomato sauce, or as an ingredient in soups.

Is great in a cold marinated salad or hot with a tomato based sauce. Would be great in soup. I just love this pasta and I'm still figuring out different ways to use it.

cook and cool. Add chopped garlic, chopped sun-dried tomatoes, chopped yellow onion, chopped kalamata olives, chopped cilantro or Italian parsley, olive oil to blend and salt and pepper to taste; then chill and hour to blend the flavors.

I am not a real fan of pasta, but I just love the fregola! It has it's own flavor and the shape is great. I think I will be able to use this is many different recipes. I have done several recipes that I have just made up as I go.
It was good as a recipe close to bulghur salad.
It had lots of lemon and vegetables in it. Also used it with cooked zucchini and fresh tomatoes. Also, it is something that can be eaten either hot or cold. It is expensive compared to other pasta and it was hard for me to find, but I am glad I persevered and found it because I really do like it and know it will become a staple in my kitchen. Just wish I could find it in my local grocery store.
