Lentils have been a basic food source for over 8,000 years, coming from the Middle East and Mediterranean areas. The most famous lentil meal comes from Genesis when Jacob served his starving brother, Esau, a meal of ”red pottage” in exchange for his birthright. Lentils have since been a staple food around the world. It is the perfect meat substitute because it is so high in iron and protein and loaded with minerals. Besides its high nutritional content, the versatility of this legume makes it an important basic ingredient in your kitchen. Lentils absorb strong seasonings, but are also good with basics such as salt, garlic and olive oil. Our lentils are imported from France and are the most prized of all of the lentil varieties. Grown in the volcanic soils of Puy, they are delicate, rich, and earthy in flavor. Verte du Puy are the best for cooking as they retain their shape. There is no need to pre-soak these lentils; just rinse in cold water and cook. Use them in a salad or in soups, stews, and casseroles.

These French lentils need nothing more than 15 to 20 minutes of soaking in hot water to be ready for use. I used them to make Barefoot Contessa's Lentils with Salmon from her Barefoot in Paris cookbook and the results were delicious.

Love these lentils. They hold their shape and don't get mushy in soup. Excellent taste; truly the "caviar" of lentils. Wish they weren't so expensive. But still worth it!

These lentils hold up when others turn to mush. They hold a beautiful color when cooked and have a good tooth.
