This Italian specialty of ground figs stuffed with pistachio is produced by the picturesque Santomiele Farm. When Antonio Longo's grandfather came back from Argentina, he decided to buy, with the economies of a lifetime, a country estate (about 6 metres) called Santomiele, in that far away land. With the help of some farmers, he started the cultivation of the land planting fig-trees (about 300 trees) and olive trees. The cultivation of the white fig (scientific type Dottato) improved more and more till arriving, at the end of sixties, to the quantity of 50 quintals of dry product yearly.

With the death of his grandfather, at the beginning of the seventies, the farm suffered a slow decline. It wasn't until the beginning of the nineties, when Antonio started the restoration of the country estate using methods of exclusively natural cultivation . In 1999, the great quantity and the good quality of these products were quite visible. Therefore, Antonio had the foresight to give start to the company “Santomiele s.a.s.” with the primary objective to promote and to give value to this product.

Comments about Capicollo Arabico (Fig Salami) - 3 oz.:

Certainly something that combines figs and pistachios is enough to get your attention, so I had to try it. They do combine well for a unique and exotic flavor. Surprisingly, the flavor is not as strong as a expeceted. Enjoy as a healthy snack, although a bit pricy for the 3 oz. ammount.

A delicious tid-bit--it might be nice to put out for an appetizer--but with a little cheese and a nice wine, it's a great nosh for one or two.
