
At a homey "osteria" in Mantua, Italy this past Spring I had a wonderful pasta dish with bigoli, fresh tomato sauce, Italian beans, and diced pancetta. It was so wonderful, I had to try to duplicate it. This pasta was the key - the exact noodles I ate there.
All Paste (not "Pastas"!!!) from Morelli are great, but I like those with the wheat germs a little better, and those with flavourings I even LOVE. That's the only reason why I gave only 4 stars instead of five. Made by artians with old tools the way it should be, and although simple, even these simple paste will put all american-made noodles to shame.[...]
