The ancient Morelli pasta factory was founded in 1860 in Pisa, Italy. Today, the fifth generation of Morellis still run this enterprise. They continue creating a vast range of specialties using ancient techniques; free from preservatives and coloring agents. The result is truly wholesome pasta, with a wonderfully rich flavor and consistency. Their Linguine pasta with spelt is an example of their range of specialty items. Spelt is an ancient cereal grain native to southern Europe. It is easily digestible and has a slightly higher protein content than wheat. The spelt makes pasta that has a more delicate texture and nuttier flavor than regular wheat pastas. Please note this pasta is not entirely wheat free as it does contain wheat germ.

This pasta is great with a cream sauce, but it does cook faster than most pastas so keep an eye on it when you boil it.

Since I tasted farro (spelt) pasta in Italy this past summer, I have been looking for a good farro pasta here. This was not what I was hoping, the texture was very mushy and the flavor not great.
