Corn is a staple in northern Italy with its most famous product being polenta, made from corn meal. The Morelli family of Tuscany has produced corn pasta, free of preservatives and colorants. Made with durum wheat semolina, durum wheat germ and organic corn meal, they have produced a distinct yellow linguine with a grainy texture and natural corn flavor.
