The Morelli Family has been making pasta since 1860 in Pisa. They create the many unique pastas from Tuscany using traditional techniques. Wheat germ is essential for creating their pasta. During the normal cereal grinding process, the wheat germ is removed from the semolina in order to reduce the perishability of the product, which means that the pasta factories are forced to process the flour without the wheat germ. But, thanks to the methods used by the Morelli pasta factory, the wheat germ, always fresh, is re-incorporated into the semolina. The machines slowly press the kneaded mixture after having hand rolled it onto frames. The drying process occurs in cold storage rooms where the pasta remains for 36 hours at a low temperature. These steps maintain the intrinsic taste and nutritious properties of the product.

I love this pasta. Last year in Rome I picked up a few pasta items to bring back with me. This happened to be one of my favorite items. I was afraid that I would have to return to Italy to find this pasta again.
