Israeli Couscous was created specifically for the Israeli market in the 1950's during a national recession. Made of hard wheat instead of semolina, it has become a staple of the Israeli diet. This couscous features large granules that hold a sweeter, nuttier flavor, which is achieved by a toasting process that caramelizes the starch. This allows it to absorb liquids while remaining “al dente”. It makes a perfect side dish to meat, poultry or fish. It is also delicious as a main course; mixed with vegetables; or with your favorite pasta sauce. It is also great as a cold pasta salad.

I love this product in making one of the BEST pasta salads you could dream of making. It gives pasta salad a new and unique texture then the standard pastas used. I mix a bag of this Israeli couscous with a small box of Mother's mini-bow ties, all any fresh chopped veggies, make a dressing like a creamy Italian and you have one of the BEST dishes around and healthy too. I have more friends/family that request this when they come over to eat - they ask me ahead of time to "do your special pasta salad".

I know that Couscous absorbs the liquid you cook with so I added beef broth,the flavor was good, and texture of Couscous was excellent! I will order this again.

I simply cooked the couscous in chicken stock and added slivered almonds. Simple to make yet so delicious!

As a great alternative to pasta, try giant pearl couscous. You can use almost anything to cook the product (soup bases, broths) - toss in your favorite herbs, mushrooms, etc. The texture of the giant pearl couscous is as interesting as it is satisfying. Try toasting the couscous in a high quality olive oil until it turns golden brown before you add the cooking liquid.
