I have used this as both a side dish and a main dish. Once you have mastered making risotto, you can change out the ingredients and make pretty much whatever best suits your personal tastes. Risotto can be as basic as mushrooms, or more complicated with asparagus, salmon and capers, etc. I have ordered this produce multiple times and plan to continue doing so. Makes a very creamy, flavorful risotto.
