This certified organic semi-pearled comes from Italy specifically the Mugello region of Tuscany. Farro is the world's original grain from which all others derive, including rice, barley, wheat and rye. Because it is hard to grow, farro almost became extinct after World War II. However, it is now making a big comeback, especially in Italy where the top restaurants feature it in soups and side dishes. It has a pleasant nuttiness and a hardy texture. Naturally high in fiber, protein, and B-vitamins, it is also very low in gluten, which is good for those who are allergic. Farro grains look like brown short-grain rice, but each grain retains a firm, chewy texture even after overcooking.

Comments about Organic Farro:

I have been looking for farro since I had it by accident in Paris. I didn't know what it was until I saw a chef on Top Chef use it. Am delighted by the product. I use it like arborio rice and make what is a wheat-based risotto. Yummy.

Farro is great as a side dish in lieu of rice or potatoes. It also combines well with vegies and can be used to make risotto.

Comments about Organic Farro:

We did a bike trip to the Umbria region of Italy last fall and had a delicious salad of farro, tomatoes, and basil one day for lunch. When we got back to the US, the only place I could find farro was at igourmet. Alice Water's cookbook - The Art of Simple Food - has a recipe for Farro salad similar to what we had in Italy. My favorite way to eat Farro is in soup, especially the Farro and Bean Minestrone soup from the Silver Spoon Italian cookbook; everyone loves this recipe.

Comments about Organic Farro:

this grain is great, I did not know of its italian origin. i use it in my middle eastern cooking. it makes a great stuffing for turkey when precooked (half way) because it retains its texure. my favorite recipe for it is as follows
1 cup of Farro(soak for about 10 minutes before using)
1 cup of long grain rice
3 & 1/2 cups of chicken stock divided
1 med onion emulsified
2 tbs butter
salt & pepper to taste.
Melt butter add onion and saute for about 3 minutes add the faro and 2 cups of the chicken stock. bring to a boil then reduce heat to med. and simmer till all water is absorbed. Add the rice and the remaining chicken stock and bring to boil again then let simmer till all water is absorbed again. Let sit covered (do not remove the cover) to let it steam for about 15 minutes. Fluff with a fork and enjoy. tastes great with garlic & Olive oil tomato sauce.

Comments about Organic Farro:

I have to say I was very happy with this farro. It has a delightful nutty taste with a nice firm texture after cooking. It is a grain, so I didn?t feel as guilty after eating it, like I would with a carb such as rice. Serve the cooked farro with a simple mix of seeded tomatoes cut small, and some red onion diced. Top with a basic vinaigrette of balsamic or sherry vinegar, extra virgin olive oil, minced fresh garlic, a touch of dijon mustard, salt and pepper. Mix well, and enjoy. Serve room temp! So delicious!

Comments about Organic Farro:

I enjoy trying good flavourful grains. I am always on the lookout for the "different" I certainly found it in Farro. I used this item as a side dish for a starch and got rave reviews from my very finicky family! It can be eaten hot or cold and would be good with a vegetable mix too. The texture is good and not mushy after cooking. The taste is exceptional. A great source of protein too.
