I'm not sure that it's creamier than arborio - i'd have to test a recipe with both side by side... but it was definitely creamy and made a perfect risotto. It did seem to take a little longer to cook...

Wow! Made a batch of risotto using a "tweaked" Mario Batali recipe using mushrooms and asparagus. Used 1 and 1/2 cups of uncooked rice and it took about the full 8 cups of chicken stock. 2 oz of butter and 1/2 cup of igourmet Parmigiano Reggiano to finish.
Outstanding and easy to make. Yes, you have to pay attention for 20-22 minutes but you do NOT have to stir for that entire time. So creamy and flavorful, al-dente but rich and very rice flavored. Having checked other places that offer South American grown at higher prices, I'll stick with this igourmet Italian offering. Will buy again and again!!

This rice holds its shape during the long slow cooking of risotto, much better than Arborio rice.

I lived in Italy for 4 years, this is the best, hands down, for authentic risotto! It works well with meats and fruits. A little parmiagiano reggiano, prosecco and summer plums make one delicious meal.

If you are going to make Risotto - don't even think about Arborio rice.It just doesn't get any better than Carnaroli.I was going to make it one night and ran out, so I went to [...] and ordered 2 more packages and waited for it to come in the mail before I made the dish.
