Rice (Oryza Sativa) has been cultivated since 5000 B.C. Descended from wild grass, it was probably first cultivated in the southern foothills of the Himalayas in the upper reaches of the Irrawady, Salween, and Mekong. Our "popcorn rice" is the Basmati variety, literally translated as "queen of fragrance". It has a perfumy, nutlike flavor and aroma because it is aged to decrease its moisture content. Originally developed in Northern India, Basmati rice was only recently developed for Louisiana's rich delta soil and favorable climatic conditions. This migration has further enhanced its flavor and aromatic qualities. Basmati is a long grain, which means that the grains are four to five times the size of their width. Long grain rice produces light, dry grains that separate easily. The white variety has the husk, bran, and germ removed. This is sometimes referred to as "polished rice". The brown only has the inedible outer husk removed. The nutritious, high fiber bran coating gives the brown rice a light tan color, nuttier flavor, and chewy texture.

I really enjoyed the complex flavor of this rice, as well as its aroma while cooking. It came out a bit firmer then I'd like but it was the first time I'd tried to cook brown rice in my rice cooker so thats entirely my problem. Even with it being a bit firm it was delicious and there were no leftovers by the time my family got through. I like to cook it using coconut water for some of the water - it adds a nice subtle sweet thai flavor to the dish.
