There are many unproven mythological tales as to how rice came to be. The Chinese myth is that rice was sold as a gift to the gods in lieu of animals. It is believed that after the lands were flooded, all living plants were destroyed. Animals were scarce, making hunting difficult. One day, a dog came bounding across a field and as it approached the Chinese people, they noticed its fur was covered with yellow seeds. Not knowing what these seeds would produce, they planted them and, as a result, rice grew. Even today, the Chinese people have a strong belief that the precious things of life are not the pearls or jade, but the five grains, with rice being number one.

Did you know that rice is one of the few foods in the world which is entirely non-allergenic and gluten-free? The World of Rice will show you how versatile this simple grain can be, with a selection featuring imported rice from Italy, Spain, Bhutan, and Louisiana. This collection includes:
  • Wild Pecan Rice: Although called Wild Pecan rice, it is not a wild rice and it contains no pecans. It is nutty though. (2 lb.)
  • Grey Owl Minnesota Cultivated Wild Rice: Ancient grain from the Great Lakes region. Chewy texture and nutty flavor. (1 lb)
  • Forbidden Rice: Medium-size Chinese black rice that is prized for its delicious nutty taste, soft texture, and beautiful rich deep purple color. (15 oz.)
  • Calasparra Rice: Our Calasparra rice is short grained rice. Short grained rice, or pearl rice, has a white mark in the center that contains extra starch. The pearl flavors the other ingredients and absorbs the stock. This is essential for successful paella. This rice is difficult to overcook and does not stick together. Great news for anyone who has problems making the perfect rice. (2.2 lbs)
  • Kalijira Rice: Leaving the germ and bran layer intact, this tiny, aromatic brown rice is heart-healthy with a low glycemic index. Distinguished by its delicious and delicate flavor, Brown Kalijira cooks in only 25 minutes, producing firm, yet tender separate grains. Use this heirloom rice in your favorite recipes. (15 ounces)

These rices gave my family an opportunity to experience another culture and opened up new tastes for them. The only real problem is that on some the cooking directions were missing but a quick search of the internet and I found the basic instrucitons.

Comments about A World of Rice Collection:

I haven't tried them all yet, but the Pecan rice was a great base for cajun red beans and rice recently. The Vialone nano is one of the best for risotto. The Bhutanese red rice was fantastic in a rice salad mixing the red with green and black rices.
