Stefan D. Czapalay, c.c.c. (Certified Chef de Cuisine), is one of Canada's premiere culinary activists. He came to the forefront of Canada's culinary scene as a result of frustration more than desire. While working at a small country inn on Prince Edward Island, he noticed a predominant use of low quality ingredients and imported produce, and a disregard for fresh produce available from local farms struggling to sell their produce. His rationale – that chefs should use quality local products - was instilled in him even further after a short stay in Europe, where the chefs with whom Stefan worked displayed such strong convictions about supporting local producers.
When cooking with salts of this quality, it is imperative to understand that they are not meant to be used to flavor large pots of boiling water. These pristine minerals are to be used to finish foods at the last minute so the independent flavor and texture each offers may be experienced. Each salt contained in the collection has a different mineral characteristic. Chef Stefan has included a few suggestions on how to use these salts; however, he suggests you experiment and perhaps perform your own tasting and food pairing to discover which salt works best for your favorite foods.
