Nirmala has spent the past ten years traveling to spice plantations, local farms, and bustling marketplaces in search of exotic ingredients for her original recipes.

Native to the Moluccan Islands of Indonesia, the fleshy nutmeg fruit will only produce on female trees. When ripe, they split open to reveal an exotic, red, lacy membrane known as mace. The nutmeg seed is protected inside a hard shell. Nutmeg and mace have a similar sweet pine-like aroma and warm, deep bittersweet flavor with hints of cloves. When grated, our whole Nutmeg seeds marry well into any type of desserts.
