Za'atar, the holy hyssop, is an ancient herb or wildflower grown mainly in the Holy Land, especially in the Galilee region and Jerusalem of Israel. The name, za'atar refers to both an herb (
Origanum syrianum), as well as a spice blend containing the herb. A wild form of oregano, za'atar has a flavor that is a cross between Greek oregano and thyme. Today, it is used as a spice and a medicine as it was in Biblical times. It is illegal to harvest wild za'atar in Israel, so Pyramid only buys za'atar that is grown under strict supervision of the National Za'atar Board of Israel.
