In the United States, many people associate paprika with foods from Eastern Europe, particularly with the cuisine of Hungary. The peppers used to make paprika are actually natives to the New World, but they are now grown in several countries, including Hungary and Spain. Spanish paprika is known as pimenton. It is made from round peppers that are about the size of a peach, is a paler shade of red than Hungarian paprika, and has a slightly different flavor. It is almost sweet in taste and is used both as a coloring agent and as a spice. The Spanish add it to seafood, sausages, rice and many other savory dishes. This Denomination of Origin product, Pimenton de la Vera, is made from oak fire dried native peppers that are stone ground to a fine texture. The peppers adopt a pleasingly smoky flavor from the fires. The resulting spice, a powdery smoked paprika, is available in sweet (dolce) and hot (picante) varieties.

Smoked paprika's use in cooking is almost endless. It adds an extra level of flavor to chili, soup and stew; sparks up sauces, scrambled eggs or omeletts; and makes deviled eggs or spiced nuts deliciously different. Essential to a Spanish sauce named romesco, smoked paprika complements many Southwestern dishes as well. Rub it on meats to add a subtle, smoked flavor without actual smoking. Sprinkle it over rice, potatoes or casseroles. Finally, try drizzling olive oil flavored with Pimenton de la Vera over steak, chicken, fish or vegetables. Varieties sold separately.

I tried it with with a number of dishes including stewed chicken and tuna salad. A little goes a long way and adds a very distinctive, slightly sweet, smokey flavor.

We made a Peruvian chicken recipe that was on "CBS's Chef on a Shoestring" a few weeks ago. We made one batch with picante and one with duluce. Bot recipes were excellent. We will be looking for other recipes that use this spice.

Love this stuff! its hard to find then if you do ridiculously overpriced. The smoky flavor is subtle so it dosnt make everything taste like bacon or hot dogslike alot of smoked and fire roasted items can I love to use this as a last touch when I have no plan just cooking dinner with whatever I always loved paprika and have several kindsThis is great with potatoes I ve braised small potatoes small whole onions whole garlic cloves and shallots ( pre browned in carli olive oil!) with wine herbs tyme rosemary bay and this paprikaWOW! try it even a baked one with olive oil as a toping or cut up some potatoes and roast them with olive oil and paprika and S&P and your favorite herb use the herb and paprika toward the end again or only also for the BEST NY STYLE BREAKFAST HOME FRIES!this is a great product and its cheaper here than anywhere Ive seen itthanks [...]

This type of paprika was hard to find [...]. I had a few recipes that called for it and boy does it make a difference over the sweet paprika! You really have to try it - it is like a hidden secret someone has let you in on. You'll be glad you have this on hand!

For those accustomed to cooking with pimenton de la vera, rest assured that this is the real thing--no more stuffing your suitcase with tins when you can get it here. Newcomers must realize that once you cook with pimenton, you will never submit to the insipid tyranny of grocery store "paprika" again. Uses are too numerous to enumerate, so buy a few tins at a time.
