Juniper Berries are the fruit of an evergreen shrub (Juniperus communis) which grows wild throughout most of the northern hemisphere. It takes two years for the berries to ripen to a dark blue, at which time they are ready to pick. Use them slightly crushed, alone or with their companion herbs; in stuffings; in marinades for pork, venison, quail, Cornish game hen, and other fowl or game. Crush them with salt and garlic for use in pates.

I was so glad to find these as they are essential to several recipes I love to make in wintertime. I use them in hassenpfefer and long,slow cooked sauerkraut dishes. Substituting a shot of gin is nothing like using the real thing. I plan on freezing what is left until I can use them up.
