Since Nirmala Narine (talented author of In Nirmala's Kitchen) was a child growing up in Guyana, South America, she has focused on mingling the fragrant spices of her Indian roots with the bold flavors of the West Indies and South America. Nirmala has spent the past ten years traveling to spice plantations, local farms, and bustling marketplaces in search of exotic ingredients for her original recipes.

Cardamom, one of the oldest spices, originates in the tropical forests of Sri Lanka. Today, it is an essential ingredient in many Middle Eastern and African cuisines. There are two types of cardamom--green and black. We offer the small greenish-colored pods that have a distinctive lemony, flowery aroma and a warm, bittersweet, fruity flavor.

To get the maximum flavor from these pods, bruise them slightly to break the pods. Green cardamom is the base for several desserts and drinks, while black cardamom is used for savory cuisines.
