These fantastic Friulian Wine Jellies, lovingly prepared in the kitchen of Livio Pesle, are quite simply some of the most stunning creations we have had the pleasure to sample. They will elegantly heighten the pleasures of every cheese course. Beautifully packaged, they make the ideal gift for the cheese-lover in your life. Available in three distinct flavors:
  • PICOLIT WINE JELLY
  • - Picolit is the most delicately flavored of the indigenous grape varietals of Friuli, with full, high-note aromas against a light almond background. This golden wine jelly has a more lively acidity than jellies made from Sauternes or Vin Santo. This makes it a splendid partner for foie gras or other rich and/or smoked products. It is highly recommended with Torchons of foie gras, goose or duck patés, foie gras paté, or goose or duck breast (especially stuffed with foie gras).
  • WINE JELLY BISHOFF
  • Bishop or Bischof wine was made with aged white wine and citrus fruits. Following the original recipe found in the archives of Livio's family, he has used Tocai Friuliano and added lemons, bitter orange, onion, ginger, horse radish, and dill. The moderately hot flavor complements Smoked Salmon and Lox.
  • ACETO BALSAMIC JELLY
  • The Modena Balsamic Vinegar is than reduced by simmering it for a very long time, never exceeding a temperature of 60° Celsius. The result is a rich, mild jelly which has the right combination between sweetness and sour similar to an expensive Aceto Balsamico Tradizionale di Modena.
  • VERDUZZO WHITE WINE JELLY
  • - Verduzzo Friulano, also known as Ramandolo, is one of the most famous wine grape varieties in Friuli. It is a perfect pairing with aged cheese such as Grana Padano or Mountain Gorgonzola. The slow cooking of the aged Verduzzo Friulano wine gives the jelly a lovely golden to amber color. This gelatina retains the rich, mature character of its parent wine even without the presence of alcohol. It is superlative partner with Montasio cheese or other typical Friulano mountain cheeses.

    If I want to snack on cheese and will be driving, I dollop the white wine preserve on my cheese & crackers. Also a good gift for individuals sensitive to vinegar, also, this doesn't give me stinky breath like my other favorite cheese partner (chutney).
