Amfissa's olives are semi-firm with a mild, fruity flavor. Large and fleshy with tiny pits, these olives are propagated in the Greek hills surrounding Delphi. Amfissas are picked when completely ripened, then slowly brined and cured in salt and vinegar. The olives make an elegant snack, and their mellow flavor is an ideal contrast for strong cheeses, especially fetas. In Greece, Amfissa olives are often served in soups or stews.

Available in Green or Black. Varieties sold separately.

These olives are okay but need to be used in something that provides flavor balance. I used some in a macaroni salad and they went well with the other spices.
