Kalamata olives are an important part of Greek cuisine and Greek culture. This black-purple, almond-shaped olive is found in Greek salads and many other Greek dishes. The olive is also found throughout Greek mythology. Athenians claimed the first olive tree, given to the Greek by the goddess Athena and growing on the Acropolis. Our Kalamata olives are imported from Greece and still contain their pits. They are cured in brine. Brine not only serves a preservative function, it breaks down the sugar that olives contain into lactic acid, thus contributing to their flavor, which is meaty and tangy.
