Sossano is situated at the southern end of the Berici Hills, which rise a few kilometers south of Vicenza in the Veneto region of Northern Italy. They enjoy a mild and temperate climate in this area, which encourages a great variety of aromatic herbs and wild shrubs among which juniper is widespread. The Berici Hills are famous for their many DOC wines, olive oil, black truffles, and fresh produce.
These fresh and tender eggplants from Vicenza are preserved in a light sunflower oil, wine vinegar, sugar and salt. No artificial colors or flavors have been added. Absolutely perfect for your salads or vegetable tray. You might also use them as an ingredient in a special Vegetable Lasagna recipe (be sure to remove excess oil before using them in a lasagna recipe).
